Easy Cornbread Recipe

This cornbread recipe is super basic with the addition of canned corn for extra plump texture and flavor! They can easily be turned into cornmeal muffins for individual servings or you can pour the whole batter into a cast iron skillet or pan. There are no complicated ingredients and you just mix and bake, its that EASY!

What’s the difference between cornmeal and polenta?

Cornmeal is ground corn and polenta is a dish made from the same grain. Polenta is also referred to cornmeal mush and that is because it needs to be boiled when preparing.

Cornmeal vs Cornflour?

Both are ground corn. Cornmeal has a grittier texture and cornflour (also known as cornstarch) is milled to a finer consistency. Each will give a different texture outcome.

I don’t have a cast iron skillet can I bake in a pan?

I used a 10″ cast iron skillet for this recipe, however a 9×9-inch pan will work just as good or even a 10 x 8″ pan.

How long do I bake cornbread muffins?

It can take as quick as 15 minutes to bake if using a muffin tin.

Easy Cornbread Recipe

  • 1 cup cornmeal
  • 1 cup flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 4 tsp baking powder
  • 1 cup milk
  • 2 eggs
  • 4 tbsp butter melted
  • 15 oz creamed corn optional

Instructions

How to make EASY Cornbread

  • Preheat oven to 400°F.
  • Combine the dry ingredients. Add the milk, eggs, and melted butter. Whisk until moistened.
  • Pour into a greased 10-inch cast iron skillet and bake for 20-25 minutes or until edges are golden.

Notes

*Creamed corn can be substituted with canned whole kernel corn drained or just omit.  
*For an extra crisp crust pre-heat cast iron skillet in the oven before pouring the batter in.
