This baked potato soup is so easy to prepare and you probably won’t even tell a difference between Panera Bread’s version or this! 

One day, after finishing a plate of the loaded baked potato soup from Panera Bread and closely inspecting their version, I was inspired to recreate that delicious bowl of hot soup. I noticed only a few, yet incredibly well paired ingredients — bacon and potatoes! This super creamy, few ingredient potato soup, (literally only noticed potatoes, scallions/onions, what seemed to be bacon in a creamy white base) tasted incredible. If you want to replicate Panera Bread soup than this potato soup recipe is a must try!

Baked Potato Soup

Ingredients for Baked Potato Soup Panera Bread Copycat Recipe:

  • 7 russet potatoes, diced
  • 5 1/2 cups chicken stock
  • 2 onions, diced
  • 6 tbsp butter
  • 6 heaping tbsp flour
  • 1/4 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp ground mustard
  • 5 oz cream cheese, diced
  • 1 1/2 cups milk
  • 3 tbsp bacon bits
  • green onions (garnish)

How to make Baked Potato Soup Panera Bread Copycat Recipe:

1. In a medium pot boil chicken stock and potatoes for 15 min.

Note: I used chicken bullion & water for the stock. 

2. Meanwhile in a separate large pot, sauté onions in butter until tender. Then stir in the flour and seasonings.

3. Add in the cream cheese and as soon as the cheese starts melting, slowly whisk in the milk.

4. Once the mixture is smooth and bubbly, ladle in the potatoes with the stock until you’ve reached the desired consistency.

5. Stir in the bacon bits and garnish with scallions. Serve.

    This soup is fabulous. It’s easy, thick and delicious. My husband is not a big fan of soup but said he actually liked this and that it was “very good” and would eat if again. My youngest daughter had a sleep over and wanted to take some with her for her friends. The only thing I did differently was to cook my own bacon (4-5 pieces) and use the bacon grease to substitute for part of the butter in which to cook the onions. I chopped up the bacon for the bacon bits rather than using pre-packaged bacon bits. Also, my onion was huge, so I only used one, which looked to be about the same amount as the onions in the photo. As for servings, I’d say we ate about a total of 5 medium-sized servings last night, my daughter took 2 servings with her, and I still have about 3 servings left over. So for us, this made approximately 10 servings.

    This is the BEST potato soup I have ever made. Even my husband said he liked this better than other recipes I’ve tried. I was wary of how much onion is in the recipe, but it gives it great flavor.

    This is without a doubt one of the easiest and best tasting potato soup’s I have ever eaten. Easy to make awesome tasting. I whipped up some quick easy yeast rolls to go with it for dinner and it was great. I was in heaven. I was in need of comfort food and it more than satisfied. Thank you for the recipe.

      I can’t say for sure as each portion may vary by person but perhaps 4-6 people, depending on how big of portions you prefer.
