This baked potato soup is so easy to prepare and you probably won’t even tell a difference between Panera Bread’s version or this! 

One day, after finishing a plate of the loaded baked potato soup from Panera Bread and closely inspecting their version, I was inspired to recreate that delicious bowl of hot soup. I noticed only a few, yet incredibly well paired ingredients — bacon and potatoes! This super creamy, few ingredient potato soup, (literally only noticed potatoes, scallions/onions, what seemed to be bacon in a creamy white base) tasted incredible. If you want to replicate Panera Bread soup than this potato soup recipe is a must try!

Baked Potato Soup

Ingredients for Baked Potato Soup Panera Bread Copycat Recipe:

  • 7 russet potatoes, diced
  • 5 1/2 cups chicken stock
  • 2 onions, diced
  • 6 tbsp butter
  • 6 heaping tbsp flour
  • 1/4 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp ground mustard
  • 5 oz cream cheese, diced
  • 1 1/2 cups milk
  • 3 tbsp bacon bits
  • green onions (garnish)

How to make Baked Potato Soup Panera Bread Copycat Recipe:

1. In a medium pot boil chicken stock and potatoes for 15 min.

Note: I used chicken bullion & water for the stock. 

2. Meanwhile in a separate large pot, sauté onions in butter until tender. Then stir in the flour and seasonings.

3. Add in the cream cheese and as soon as the cheese starts melting, slowly whisk in the milk.

4. Once the mixture is smooth and bubbly, ladle in the potatoes with the stock until you’ve reached the desired consistency.

5. Stir in the bacon bits and garnish with scallions. Serve.

How to make Baked Potato Soup:

    We live in the boonies so going to Panera is a treat. My husband was disappointed during a recent road trip and stop at Panera because he wanted to try their baked potato soup and they were out, so I thought I’d look up recipes to see how it differed from my (what I thought was very good) potato soup recipe. I stumbled across this recipe and made it. Excuse me for yelling but IT IS SO GOOD!!! We argued over the leftovers! And I’m not ashamed to admit that it is exponentially better than my own recipe. Am making it again today because everyone wants more. I used 4 large baking potatoes and one Yukon gold, only one onion because it was large, and a mix of heavy cream and skim since I didn’t have whole milk. It made approx 20 cups of soup. Am going to look through the rest of your recipes to see what else I can make this week! Yum and thank you.

    I had a hankering for some yummy potatoe soup when I found the receipe. The only thing is, I didn’t have any cream cheese. I substituted sour cream for the cream cheese and it turned out delicious. By far the best potato soup I have ever made. I will for sure keep this handy and try it again, this time with the cream cheese.

    My gf loves the this soup. I used the bacon fat plus 1/2 butter. For the roux, more bacon flavor.

      you could try half & half or heavy cream diluted with water to substitute the milk.
