Baked-Tilapia-Spinach-Casserole

Ingredients for baked tilapia:

  • 5 tilapia fillets (1lb)
  • 8 oz bag of fresh spinach
  • 3 tbsp butter, sliced
  • 1 cup shredded Monterey jack cheese

Ingredients to make sauce for baked tilapia:

  • 1/2 cup mayonnaise
  • 1/2 cups grated parmesan cheese
  • 2 cloves garlic, crushed
  • 1/2 cup sour cream
  • 1 tsp old bay seasoning
  • 1/2 tsp adobo seasoning
  • 1/4 tsp black pepper
  • 1/4 tsp salt

NOTE: Use as much spinach as you can pack into your baking dish because spinach does shrink quite a bit.

1. First, pack spinach onto the bottom of a baking dish. Top with butter slices and layer the fish fillets over the top

2. Then, combine the sauce ingredients and evenly spread over the top of the casserole. Finally, sprinkle with cheese and bake in a preheated to 500 degrees F oven for 10 minutes.

Note: The thicker the fish fillets the longer you may need to bake your fish.

    Would it still taste ok if I substitute the sour cream for cottage cheese with a little lemon juice mixed in it?

      You can try that out but lemon juice may make some dairy products curd (like milk.)

    This recipe is awesome!! I have had this page open on my desktop for at least a month. I have been wanting to make it and I finally got around to making it tonight. It is excellent!! My husband is still eating it right now and he keeps saying, “Mmmmm!” He really likes the sauce and wants me to try that sauce on some sliced pork loin. This is a very tasty recipe!     I made this tonight with a couple substitutions…I didn’t have sour cream so I used low fat ricotta, omitted the adobo ( didn’t have any) but added garlic powder and some thyme. I also added a couple tbs of lemon juice. It was so delicious! My children, ages 2-19 all loved it also. It tasted like was eating in a nice restaurant.
