Pizza Roll Ups with Tortillas
My friend had brought a pan of these pizza roll ups over one day, to have along with our Sunday night dinner. I thought what an easy supper to bring for the kids, after all it looked like a pizza rolled up with tortillas. Once I had one, I was eating another and instantly fell in love with all the pizza flavors!
It’s kind of silly to make a pizza roll ups recipe because its just that easy! But knowing how everyone loves to eat these roll ups and the times I get asked for the recipe, it only makes sense to actually make a recipe for them.
I’ve also found myself to make these very often, because it really is one of the quickest meals to put together! I can see how versatile the fillings can be, from BBQ chicken to a tasty cheeseburger filling, but pepperoni and cheese are something I almost always have on hand.
You can really make tortilla roll ups into just about any pizza-flavor you want using ham, leftover taco meat, or buffalo lunch meat. If you want to make them extra crispy like taquitos, cook them in the air fryer sprayed with some cooking spray.
However, I prefer them on the soft side so I bake them on low heat just until the cheese melts, they turn out so gooey and cheesy!
What You’ll Need For Pizza Roll Ups:
- Flour tortillas- small flour tortillas are best. I used the 20 count tortillas from Aldi which are 5-6 inches wide. Choose soft flour tortillas so that you don’t have to heat them up for rolling. The Aldi ones are super soft and pliable at room temperature!
- Pizza Sauce- 14 ounces of jarred pizza sauce is just enough for a pack of tortillas plus some for dipping.
- Pepperoni- I use regular-size pepperoni slices.
- Mozzarella cheese- that is shredded or use half of a string cheese.
- Seasonings- like garlic powder, Italian seasoning, and garlic salt make an incredible herb pizza topping!
How To Make Pizza Roll Ups:
I like to use two baking pans not to overcrowd the pan and allow for the pizza rolls to heat well. If you have a large pan or cookie sheet you could fit them all in at once, but I generally serve them in glass baking dishes to make them better for serving crowds.
- Microwave the tortillas in a damp paper towel if they are cold out of the fridge or you can bring them to room temperature.
- Preheat the oven to 350°F. Lightly spray your baking dish with cooking oil.
- Top each tortilla with 1 tablespoon of pizza sauce, 1/4 cup of mozzarella cheese, and 4-5 slices of pepperoni.
- Tightly roll up the tortillas and place them onto the baking dish seam side down.
- In a small bowl combine the seasonings (garlic powder, Italian seasoning, and garlic salt).
- Brush 1 tablespoon of oil over the roll ups and sprinkle with the seasonings.
- Bake in the preheated oven for 10 minutes or until the cheese melts.
How Long To Heat Up Pizza Rolls?
You only want to heat pepperoni pizza roll ups just until the cheese melts. Homemade pizza roll ups are soft and cheesy, if you you want a crispier crust, add more oil to your baking dish and bake at a higher temperature. An air-fryer is great to make crispy tortilla shells, simply spray them with cooking oil and air fry in a single layer at 400°F for 5-8 minutes.
Can I Make-Ahead?
Yes, pizza roll ups can be filled and rolled, then refrigerated before baking. You can make them ahead up to 2 days, however put the sauce between the cheese and pepperoni so they don’t make the tortillas soggy.
Tips:

- You can use corn tortillas.
- Brush tops with melted after baking.
