How I made Taco Bell Potatoes
These Taco Bell Potatoes were created in the fall of 2017 when I wanted to replicate the Taco Bell Potatoes. Like my Creamy Jalapeno Sauce, I started testing in the kitchen, and the thought of boiling the potatoes struck! I didn’t want regular roasted potatoes that look rather dull but wanted those golden cubed chunks of seasoned potatoes just like Taco Bell’s! So I carefully observed the ingredients on the Taco Bell Fiesta Potatoes and used ingredients that were easy to access, but yet similar in action. For example, for the ingredient of tapioca flour, I went with cornstarch as both are very close. The creation was a total hit!
Aftertime, I have revisited this recipe and decided to improve the recipe and crispiness factor, by adding a bit more oil and tweaking the baking time. I must say I think it’s really a hit now! A reader has even mentioned that she tossed them in an egg wash and doubled fried them with delicious results so you can even go the deep-frier method if you don’t have the time for baking!
I could also imagine adding spices like ground cumin, chili powder or garlic powder would intensify the flavor drastically, so spice it up! I find these flavors to be very universal and simple. Taco Bell Potato Bites Copycat Recipe
- 5 lbs golden potatoes
- 1/2 cup oil
Fiesta Potato Coating:
- 1/4 cup all-purpose flour
- 1/2 cup cornstarch
- 2 tsp paprika
- 3 tsp salt
- 1/8 tsp dash cayenne pepper
- 1/2 tsp black pepper
How to make Taco Bells Potatoes:
- Boil washed and trimmed whole potatoes in 1 quart of water for 20 minutes.
- Dice potatoes into 1-inch chunks. Toss with oil. Combine the coating ingredients and toss with the potatoes.
- Divide potatoes onto two large greased baking sheets, spreading out (avoid overcrowding.)
- Bake at 425°F for 40 minutes, rotating the pans from top to bottom in between.
- Serve alone with Nacho Cheese and sour cream or use for burritos or tacos!
