Peanut Butter Cookies

These are not your Classic fork-pressed peanut butter cookies or 3 ingredient cookies for that matter! But rather compatible with the Subway Peanut Butter Cookies! They are chewy, soft, and loaded with peanut butter flavor! The cookie batter is perfectly whipped and each cookie even has the whipped scooped signature marks on top just like the peanut butter cookies Subway used to have!

Subway

Subway cookies came frozen and already scooped, all the employees had to do is pop them onto a sheet pan and bake them for 8 minutes. I remember the streak marks the cookies used to have when I would bake them for Subway back in the day. The look on top of these cookies resembles those scoop marks! The Peanut Butter (subsequently referred to as PB) Cookies from Subway were one of my favorite cookie flavors and maybe that’s because they were one of the best PB cookies out there! Subway only carries 4 cookie flavors now, which are the Chocolate Chip, Oatmeal Raisin, White Chip Macadamia Nut, and Dark Chocolate Cherry Cookies. The peanut butter cookies are unfortunately discontinued but at least you’ll have this recipe!

What are the Best Peanut Butter Cookies?

I do favor many cookies with PB flavor but these are top-notch! My search for Subway Cookies is over folks, I’m quite thrilled with how my experiment turned out. This gem of a recipe is unique since it was an experimental project similar to my Oatmeal Raisin Cookies so you won’t find one like this! I hope you give these a chance because they are incredibly delicious cookies that spread beautifully on their own!

Q&A

Can I substitute shortening?

Shortening is a type of solid fat, so use margarine or soft butter to compensate.

Can I use Chunky Peanut Butter?

Yes. Chunky peanut butter can be used in place of creamy Peanut butter, just omit the nuts called for.

Why do Peanut Butter Cookies have Fork Marks?

Some reasons for the marks peanut butter cookie dough have could be the fact that they are denser and not willing to spread. The marks flatten the cookie dough ball due to the potential lack of certain ingredients that help the cookies to spread. These cookies on the other hand call for lots of butter including peanut butter which actually helps the cookies spread on their own once baking.

Can Peanut Butter Cookies be Frozen?

Absolutely! The ones at Subway were baked frozen!

To freeze Cookies: scoop onto a tray and flash freeze. Once solid, transfer frozen cookie dough balls into a freezer bag and freeze for up to 3 months.

For Refrigerator Cookies: place whipped cookie dough batter into a large container and keep refrigerated for up to 1 week. Scoop and bake as needed. Note: omit the butter and use margarine for scoopable cookies. Butter solidifies making the batter harder to scoop once refrigerated.

How long do you bake Subway Cookies?

Usually, cookies are perfectly baked if they are ever so slightly underbaked. Overbaked cookies won’t be as chewy and sometimes harden or taste dry. The perfect timing for cookies is 7-8 minutes for dough that has been scooped with a [eafl id="24619" name="1 1/2-inch scoop / Size 40." text="size 40 cookie scoop"] or 11 minutes if cookies are scooped with [eafl id="24621" name="Cookie Scoop - Size 24" text="a cookie scoop size 24"].

Can I add Oatmeal?

Yes! Oatmeal and peanut butter go very well and make for a healthier cookie! Omit 1/2 cup of flour and add 1 cup of old-fashioned or quick-cooking oats.

What can I substitute for Butter?

Margarine or some kind of buttery blend makes great substitutes for the butter in this recipe.

Tips for Making Cookies:

  1. Omit the peanut chunks and use peanut butter chips or chunky peanut butter for the creamy kind.
  2. Add some Peanut butter M&Ms for a festive look!
  3. Omit 1/2 cup of flour and add 1 cup of oatmeal for Chewy Oatmeal Peanut Butter Cookies.
  4. Bake cookies for 11 minutes for large cookies or 7-8 minutes for 1-inch cookies.

Thank you for your reply! So sorry for the second comment as I can’t seem to reply to the previous one.. May I have the measurement in grams for the recipe? or which conversion website I may refer too? thanks again! I am gonna try the recipe tomorrow 🙂

      • Alyona Demyanchuk

Hi Fel, I usually use google for conversions, sometimes the info pops up right at the top.

    • Metqa

Hi. I tried your recipe. I measured everything ahead to make sure I had the ingredients right. But when I baked them, they didn’t spread. at all.
I looked in at the 2 min left mark and they looked like muffin tops. I pressed them with my spatula and let them cook the last 2 min. They taste EXACTLY like the Subway cookies, but they didn’t spread or flatten out on their own.
i tried pressing them flat before baking but then they turned hard and crispy. I tried baking them at 350 and it was still muffin top shaped. I added 2 T of water and 2T of additional oil, and it still won’t flatten. I don’t know what characteristics of ingredients I need to look into to get it to behave like it should. I wondered if they puff up and then collapse after so I waited till it cooled completely, but still have muffin top cookies.
All of my ingredients are basic. Flour, Sugar, Brown Sugar, regular butter, regular peanut butter, regular Large Eggs, Palm OIl Shortening. Everything was at room temperature when I blended. I dont usually bake sweets and stuff but I though I’d do something special and I’m frustrated, not because they dont’ taste good but because they don’t behave like they should which means I’ve done something wrong and I don’t know how to fix it.
The worst part is that I announced that I was making cookies now everyone is expecting perfect Subway cookies and all i have are peanut butter cake like cookies. Thanks for the recipe anyway. It’s a good tasting cookie. I’m not sure if I will take the time and effort to try to fix it though since I don’t know what I’m doing in the first place. I’ll probably just mess it up worse.

Hi Metqa, thanks for giving our cookies a try! To get cookies to spread more you’ll need to increase the butter content. What kind of flour you use can also play a role in the latter outcome as well as elevation and altitudes. I’d increase the butter by 1/4 cup or decrease the flour by 1/2 cup.

Hi! may i know what kind of pb to use? salted or unsalted? added sugar or without? thanks!

      • Alyona Demyanchuk

Hi Fel, nothing complicated just the regular creamy style peanut butter that most generic brands sell or JIF.

    • Sunergurl

Amazing recipe!! Received so many compliments on these cookies! Overwhelmingly so!

      • Alyona Demyanchuk

Thank you so much for the feedback! I’m so glad you liked them!

    • Roxi

This looks pretty good, however, Subway’s peanut butter cookies have peanut butter chips. Also to avoid the chopped nuts, use Jif’s natural chunky peanut butter and you have the two in one ingredient. As well as avoiding the additives in the regular brands

      • Alyona Demyanchuk

Thanks, Roxi! Let me know how much you used to better inform my readers!

        • Keely

When would I add in the peanut butter?

          • Alyona Demyanchuk

You would cream the peanut butter with the butter in step 1.
