Peanut Butter Cookies

These are not your Classic fork-pressed peanut butter cookies or 3 ingredient cookies for that matter! But rather compatible with the Subway Peanut Butter Cookies! They are chewy, soft, and loaded with peanut butter flavor! The cookie batter is perfectly whipped and each cookie even has the whipped scooped signature marks on top just like the peanut butter cookies Subway used to have!

Subway cookies came frozen and already scooped, all the employees had to do is pop them onto a sheet pan and bake them for 8 minutes. I remember the streak marks the cookies used to have when I would bake them for Subway back in the day. The look on top of these cookies resembles those scoop marks! The Peanut Butter (subsequently referred to as PB) Cookies from Subway were one of my favorite cookie flavors and maybe that’s because they were one of the best PB cookies out there! Subway only carries 4 cookie flavors now, which are the Chocolate Chip, Oatmeal Raisin, White Chip Macadamia Nut, and Dark Chocolate Cherry Cookies. The peanut butter cookies are unfortunately discontinued but at least you’ll have this recipe!

What are the Best Peanut Butter Cookies?

I do favor many cookies with PB flavor but these are top-notch! My search for Subway Cookies is over folks, I’m quite thrilled with how my experiment turned out. This gem of a recipe is unique since it was an experimental project similar to my Oatmeal Raisin Cookies so you won’t find one like this! I hope you give these a chance because they are incredibly delicious cookies that spread beautifully on their own!

Can I substitute shortening?

Shortening is a type of solid fat, so use margarine or soft butter to compensate.

Can I use Chunky Peanut Butter?

Yes. Chunky peanut butter can be used in place of creamy Peanut butter, just omit the nuts called for.

Why do Peanut Butter Cookies have Fork Marks?

Some reasons for the marks peanut butter cookie dough have could be the fact that they are denser and not willing to spread. The marks flatten the cookie dough ball due to the potential lack of certain ingredients that help the cookies to spread. These cookies on the other hand call for lots of butter including peanut butter which actually helps the cookies spread on their own once baking.

Can Peanut Butter Cookies be Frozen?

Absolutely! The ones at Subway were baked frozen!

To freeze Cookies: scoop onto a tray and flash freeze. Once solid, transfer frozen cookie dough balls into a freezer bag and freeze for up to 3 months.

For Refrigerator Cookies: place whipped cookie dough batter into a large container and keep refrigerated for up to 1 week. Scoop and bake as needed. Note: omit the butter and use margarine for scoopable cookies. Butter solidifies making the batter harder to scoop once refrigerated.

How long do you bake Subway Cookies?

Usually, cookies are perfectly baked if they are ever so slightly underbaked. Overbaked cookies won’t be as chewy and sometimes harden or taste dry. The perfect timing for cookies is 7-8 minutes for dough that has been scooped with a size 40 cookie scoop or 11 minutes if cookies are scooped with a cookie scoop size 24.

Can I add Oatmeal?

Yes! Oatmeal and peanut butter go very well and make for a healthier cookie! Omit 1/2 cup of flour and add 1 cup of old-fashioned or quick-cooking oats.

What can I substitute for Butter?

Margarine or some kind of buttery blend makes great substitutes for the butter in this recipe.

 

 

Tips for Making Cookies:

  • Omit the peanut chunks and use peanut butter chips or chunky peanut butter for the creamy kind.
  • Add some Peanut butter M&Ms for a festive look!
  • Omit 1/2 cup of flour and add 1 cup of oatmeal for Chewy Oatmeal Peanut Butter Cookies.
  • Bake cookies for 11 minutes for large cookies or 7-8 minutes for 1-inch cookies.

Ingredients 

Peanut Butter Cookie Dough:

  • 1 cup peanut butter
  • 4 oz butter , (1 stick)
  • 1/2 cup shortening
  • 1 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 eggs
  • 2 cups flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1/4 cup chopped peanuts, (optional)

Instructions

How to make Chewy Peanut Butter Cookies:

  • Cream the shortening, butters, and sugars for 2 minutes until pale and fluffy.
  • Mix in the eggs and then the dry ingredients. Beat well. Fold in the nuts.

  • Scoop cookie dough using a 1 1/2" scoop. Place cookies onto a cookie sheet 2 inches apart.
  • Bake for 11 minutes at 375°F.

Notes

Notes: This recipe makes 27 large cookies. I used a size 40 cookie scoop but you can use a 1/4 measuring cup instead.
