These juicy Grilled Chicken Melts make a great little appetizer that tastes absolutely delicious! My mother’s creativity didn’t fail on these little hot sandwich melts…Grilled chicken pieces are tossed along with some diced tomatoes, fresh scallions and a shredded cheese blend. The mixture is lightly seasoned and then combined with a creamy mayonnaise, creating one juicy and tasty spread for baguette slices. Store bought grilled chicken pieces will work, but I went ahead and grilled a few chicken breasts. These crostini bites definitely make a yummy appetizer and my mother has been complimented on these many times. A must make!
Ingredients for Grilled Chicken Melts:
- 16 oz of cooked grilled chicken breasts, cubed
- 1 baguette, sliced
- 2 sprigs scallions, sliced
- 2 tomatoes, diced
- 1/2 cup shredded colby jack cheese
- 1/2 cup mayonnaise
- 1/4 tsp salt
- 1/8 tsp ground black pepper
How to make Grilled Chicken Melts:
1. Preheat the oven to 400 degrees F. Line two baking sheets with parchment paper and set aside.
2. Combine the grilled chicken pieces, mayonnaise, salt & pepper, scallions, tomatoes and 1/2 cup of colby jack cheese.
3. Spoon a heaping tbsp of the chicken mixture over each baguette slice and place onto the prepared baking sheet.
4. Sprinkle more Colby Jack cheese over the tops and bake for 5-7 minutes or until cheese melts.
