    Can you use chicken thighs?

      • Alyona’s Cooking

      Chicken thighs should work, Jan.

    • Tee

Do you cover it or uncovered?

      • Alyona’s Cooking

      Hi Tee, bake uncovered.

When do you put the Monterey jack cheese on it towards the end or rate after you put the Parmesan cheese on

      • Alyona’s Cooking

Hi Terri, you would sprinkle the cheese at step 3 right after you spread the parmesan mixture before putting into the oven. Hope you enjoy!

    500° REALLY???
    That seems awfully hot.

Yes, you want to cook that spinach down fast and allow it to simmer at such a hot temperature, spinach releases lots of water especially un-wilted raw spinach. The high heat will also create a nice cheesy crust with dark spotting so I really wouldn’t skimp on the temp.
